Hi, I'm using Pandoc with a --reference-docx and I would like to use my own
title page, so, I'm thinking of creating a 1nst page in the reference docx
containing $variables$, then from pandoc command line of inside my markdown
define the values for those variables, is this possible?.

Nope, sorry, pandoc only takes styles from reference.docx. We've been
discussing some possibilities, but never got to anything.
