What version of Pandoc are you using? If I test with |echo '<p
class="dinkus">&lowast; &lowast; &lowast;</p>' | pandoc -f html -t latex
| od -t x1| I can see the UTF-8 characters U+2217 make it through into
the LaTeX output.
