I know that at this moment when I do pandoc --list-highlight-languages 
NetLogo language is not listed. Normally I use Pygments in LaTeX to 
highlight NetLogo code.

Do you know any way to find this feature for Pandoc?

You can specify additionnal languages using --syntax-definition NetLogo.xml  
where NetLogo.xml describes tour additionnal language.
