Hi,

The README says some variables in the default templates are set by 
pandoc automatically but can be overridden by a --variable option on the 
command line. Is it possible do this overriding by setting the variables 
to user default values with a custom template, instead doing it on the 
command line?

And if a custom template is used, will pandoc still load the default one?

You can use a custom template instead of the default, by
using the --template option.  There is no way to specify a
default value for a variable in a template, but of course
you can simply replace the variable with a hard-coded value.
