Is there a way of getting automatic nested numbering in Pandoc Markdown?

Example

#. Animal
  #.# Duck
  #.# Panda
#. Plant
  #.# Sunflower

would become

1. Animal
  1.1 Duck
  1.2 Panda
2. Plant
  2.1 Sunflower

This is something I really miss from Markdown and would love if Pandoc
supported.

No, not currently.

Is this something you would be happy to see Pandoc flavour Markdown
support, John?

Just asking, because I am a bit into Haskell myself and could try and code
this up at some point.

Not sure. There are a lot of complications to consider. If
you wanted to use the present AST, then you can store
exactly one start number for an ordered list. That could
be the last number in the x.y.z sequence. But what if
someone writes e.g.

    1. one
        1.1.1 ??
