Ah, I know this one! (I say it this way because I found out quite recently while skimming Pandoc's sources). The bibliographies are converted to a references yaml mapping in the metadata of the document. You are missing the --standalone flag to see the metadata. You can also, as it appears in the documentation, convert it to markdown (standalone, too, as without it the metadata is not converted) to see the yaml.
