On an apple Silicon you cannot run linux/amd64 images, you need aarch64
ones. The Pandoc docker images are amd64 only. You should use another image
or install Pandoc directly.
I encountered this problem a while back and made a apple silicon-compatible
image for quarto:
https://hub.docker.com/repository/docker/jdutant/quarto-minimal/general
Quarto embeds pandoc, so you can also use it to run Pandoc:
docker run --rm --volume $(pwd):/data jdutant/quarto-minimal pandoc
source.md -o out.html
It's a slightly older version of Pandoc, but you can use it for a try-out.
