Replacing template.tex with the one provided by pandoc-3.0.1 (via pandoc -D latex), it does not crash anymore, but gives me this error/warning:

Attaching the template (template.tex) in question (from https://github.com/killercup/trpl-ebook.git). Since the rest of TeX Live seems to work fine on my machine, the attached template is the natural suspect. Needless to say, I'd appreciate any help.
