I never pass up the chance to introduce students and collaborators to Markdown. There are dozens of editors. Most people seem to figure it out within a day or two, and we're off. If Git or Github or diff is involved I tend to handle all of that, but I think you could just pass Markdown files back and forth. I think even committed Word users don't mind playing with a text editor.
