You are probably looking for --atx-headers.

I'm using Pandoc to convert docx files to Markdown.

However, I always prefer the hash style #, ##, ###, etc… for Markdown headings, and cannot find a switch in the Pandoc docs to change to these from the Pandoc default Markdown level 1 and 2 underline headings ====, ----.

How can I set this up so my .md files always use #, ##, ###, etc… Markdown headings?
