Hello! I'm a student writing a paper about the uses of functional 
programming in the real world, and I wanted to focus on Pandoc as an 
example. Can anyone point me in the direction of resources regarding 
Pandoc's development/use of Haskell?

It's probably not exactly what you're after, but have you looked at the 
commit history on Git yet?

Search for recordings of talks on pandoc given by John MacFarlane, e.g.
