Metadata is part of the `Pandoc` document and can be accessed via

    function Meta (meta)
      -- ...
    end

or

    function Pandoc (doc)
      local meta = doc.meta
      -- ...
    end

Variables are part of the writer options, e.g.,

    PANDOC_WRITER_OPTIONS.variables['my-var']
