A tip: if you include raw markup in the `header-includes` field of
metadata, whether in the document source file or in a metadata file (but
not in the variables field of a defaults file!) you probably want to mark
it as a raw markup block so that Pandoc doesn't escape punctuation
characters in that markup, or wrongly includes it in other output formats
if you produce more than one output format from the same source:

header-includes:
  - ``````{=latex}
    \usepackage{somepackage}
    ``````
