In my case (pandoc 1.17.1, recently installed), the files can be found in  

/usr/local/Cellar/pandoc/1.17.1/share/x86_64-osx-ghc-8.0.1/pandoc-1.17.1/data/. 
Hope this helps for those in an endless quest! :)
