BasicTeX is a minimal installation meaning that many latex packages are missing from it.

You might either install MacTeX instead, which is a few GB big (I think it is close to 10), or you can use tlmgr to install whatever you need. Google how to install the missing packages pandoc's complaining using tlmgr.
