When converting from markdown to docx I get title, author and date
centered on docx.
When I convert from markdown to odt I only get title centered. How can I
the same behavior for author and date too?

Many thanks in advance,

You can open reference.odt in Open Office, then modify the Author
and Date paragraph styles, and save the result as a new reference.odt,
which you can then use either via the --reference-odt flag or
by putting it in ~/.pandoc. (But probably having them all centered
would be a better default.)
