You can debug some problems like this by using
pandoc -t latex
For example
pandoc -t latex
^\<Up/Down/Left/Right\>
yields
\^{}\textless Up/Down/Left/Right\textgreater{}
which tells you that ^ and < and > need to
be treated specially in LaTeX.
