Currently the filename convention for the Linux zip archive
is pandoc-2.7.3-linux.tar.gz, I suppose it is for amd64 arch? And the deb
build is pandoc-2.7.3-1-amd64.deb, may be it is better to release them in a
uniform naming convention as pandoc-2.7.3-linux-amd64.tar.gz,
pandoc-2.7.3-1-linux-amd64.deb in the future? This is in line with the
naming convention used in the Windows builds too.

Makes sense. I'll do that.

I think it makes sense to use
pandoc-2.7.3-linux-amd64.tar.gz
but keep
pandoc-2.7.3-1-amd64.deb
since the deb is clearly linux; this is the style of
filename generally used for debs.

I think I've got both 32- and 64-bit builds for windows
working on the new GitHub actions, but I don't have a good setup
to test. Could someone test these MSIs to make sure the i386 one
works on 32-bit windows and the x86_64 one works on 64-bit
windows?
