It appears both `jupyter` and `jupyterlab` default to `mathjax2`.
While I see a PR in `jupyter`, `jupyterlab` already has `jupyterlab-mathjax3`, an extension for rendering math with MathJax 3.

Perhaps keep both versions of `mathjax` and package such extension (plus a couple more required deps) would be a good idea?

Haven't tested with `R`.
