[updating to v3.0.0+](https://gitlab.com/AOMediaCodec/SVT-AV1/-/releases) requires an ffmpeg with [this change to the api](https://github.com/FFmpeg/FFmpeg/commit/d1ed5c06e3edc5f2b5f3664c80121fa55b0baa95), which hasn't been made into ffmpeg6 yet
