Looks like bash can deal with GNU su.  So can tcsh. 

% su --shell=/bin/bash peta
Password: 
[peta@aragorn zsh]$ suspend
zsh: suspended (signal)  /bin/su --shell=/bin/bash peta
1 % fg
[1]  + continued  /bin/su --shell=/bin/bash peta
