That was indeed the trick.
Putting
(gnus-list-identifiers "DOCBOOK-APPS:")
in the group parameters of
nntp+news.gnus.org:gmane.text.docbook.apps
was enough to remove the tags of that group, while at the same time
not setting the value globally.
