I wondered if when using gnus and nnimap and UW imap if there is a
way to make use of the targets Sent and Trash that appear when
accessing the UW imap server with mozilla?

Well, Sent is probably named INBOX.Sent in Gnus, and you can make a
Gcc header pointing to that group.
The most low-tech solution:
(setq message-default-headers "Gcc: nnimap:INBOX.Sent")
And nnmail-expiry-target could be used to make use of Trash.
