I have (setq message-cite-function
'message-cite-original-without-signature) and I like that a lot. But
sometimes, I need to use message-cite-original, instead. WIBNI there
was a way to temporarily change message-cite-function, for one
reply/followup?

I think being able to undo the damage that the signature removal does
is better, and should perhaps work now, but perhaps it would be a good
idea to have a command to redo the citation using the function of your
choice? Hm. Probably not essential functionality, though.
