I've tried to reply to the list twice now with no effect... my emails
are getting lost.

Anyway, third time lucky hopefully:

The quote was necessary.  Without the quote, the setting was ignored.

In any case, I found the solution.  This variable,

    gnus-sort-gathered-threads-function

controls the behaviour I wanted to change.  It is not a customisable
variable which is why I didn't find it immediately.  It is set to sort
by number; I changed it to sort by date and I'm a happy camper.

Actually, there does need to be a quote, it would seem.  At least, it
doesn't grok the line properly without it.

In any case, I have tracked down the problem. The variable (not
customisable):

,----[ C-h v gnus-sort-gathered-threads-function RET ]
| gnus-sort-gathered-threads-function is a variable defined in ‘gnus-sum.el’.
| Its value is ‘gnus-thread-sort-by-date’
| 
|   This variable may be risky if used as a file-local variable.

| Function called to sort the articles within a thread after it has been gathered together.

defaults to gnus-thread-sort-by-number.  Changing this (as above) does
the job for me.  This does mean, to me, that the documentation on
threads and scoring is misleading, especially with respect to
gnus-subthread-sort-functions...
